The Chardonnay is ready to drink immediately and is best consumed within 4 years.
Fermentation/ageing: soft pressing with a pneumatic press, fermentation at 15-16°C. 12-month wood aging in French oak barrels aged 3 to 6 years.
Soil: sand-loam mixed with Diestian sand, ironstone, flint stones and gravel. Underneath this, well-drained layers of Ledian and Paniselian sand.
Climate: cool temperate climate influenced by the North Sea.
Sustainable viticulture: defoliation, green harvest, 10 km of indigenous hedges and sowing flower seeds to attract natural predators, sowing grass to prevent erosion, using compost.

Its fine acidity, fresh notes and wood-aged flavour influences make this wine extremely versatile gastronomically. Think of dishes with roasted, smoked or grilled poultry and white meat, white North Sea fish, earthy ingredients (ground chicory, beets, celeriac, mushrooms) or refined seafood (lobster, scallops, crab). Also, always look for a slight bitter and acidic influence in the preparations such that the wine can match the entire dish.
Serving temperature: 10°C, serve in a large glass or decanter.
